Though their ingredients are largely the same, there is a difference between them. Stock is made from bones, while broth is made mostly from meat or vegetables. Using bones in stock creates a thicker liquid, while broth tends to be thinner and more flavorful.

Tenderising Beef

  • Sprinkle 3/4 tsp baking soda (bi-carbonate soda) on 250g / 8oz sliced economical beef cuts
  • Toss with fingers, leave for 30 minutes
  • Rinse, pat off excess water.
  • These are the best cuts of beef to tenderise:

Economical steaks – any type, like good value rump, porterhouse, sirloin, round bottom etc. that are otherwise quite dry when used in stir fries;

chuck and similar cuts of beef used for stews – this technique will tenderise the beef perfectly, however, by their very nature, stewing cuts of beef don’t have as strong a natural beef flavour as steaks. However, I’m fine with that because stir fries always have great sauces!

Poached eggs cooked in a muffin tin.

If you’re intimidated by poaching eggs in water, you can make them in the oven. Add 1 tbsp water to each muffin cup, then crack one egg into each cup, and garnish them with herbs or spices. Bake them for 12 minutes at 350°F to achieve a poached eggs consistency.

Consume Less Salt

Health experts agree a food-related habit we should all try is to consume less salt. With all the processed food we eat, the majority of individuals greatly exceed the recommended daily salt intake. Eating too much salt can increase blood pressure to unhealthy levels, resulting in hypertension. This, in turn, can cause or at least increase the risk of other health problems, such as strokes, heart attacks, obesity, kidney problems, and stomach cancer. Reducing your consumption of processed foods and seasoning home-cooked meals with herbs and other spices instead of salt greatly decreases your risk of these diseases. The less salt you eat, the lower your blood pressure should go.

Pre-packaged salads and greens may not be clean

When you buy your salad and other fresh green produce pre-packed it will have gone through a washing process, but just how clean is it? A Consumer Reports look at pre-washed salads found that 39 per cent of the 200+ samples tested contained bacteria, the type of which would indicate contamination. Similarly, a study from the University of California, Riverside found that certain leaves – in this case spinach leaves – have numerous nooks and crannies where bacteria can remain despite washing. The best advice is to thoroughly wash all greens regardless of the packaging or otherwise they come out of.
